My Ipad icloud backup message won t go away

My Ipad has a number of documents, including pdf, xls, doc, ppt files.  Some are associated with Documents to Go - Premium, which froze on the device attempting to download an update and had to be deleted (which also deleted the files that only were on the Ipad and associated witht the app).  How do I restore only that app and/or the related files from the icloud.  Ans I've found so far were not clear/specific enough or seemed to indicate the entire Ipad had to be restored.  iOS 5.1.1...|restore-documentfile-ipad-icloud-backup-restoring-device-icloud-backup

I desperately need a note I deleted from my Ipad. I followed the instructions I found on this forum and others by erasing and restoring yesterday's backup from the icloud, The problem is that the Ipad starts syncing the Notes back with the icloud before I can get to the restored note. icoud message about backing up after connected to wifi will not go away. I click OK but it still stay's ther. The issue is I cannot access anything else on the desk top untill the message goes away. help!! a few weeks ago while trying to backup my Ipad, the back up froze and I had to disconnect the cable, since then I keep getting an error when trying to backup saying iTunes could not back up the Ipad XXXiPad because an error occured.
